Colombia is known for producing some of the most well-balanced coffees in the world, and its decafs are no exception. Popular with their full body, bright acidity and rich aftertaste, Colombia coffee offers a wide range of cup profiles thanks to the variety of its climate and geographic conditions. In the country, coffee production and trade activities that are mostly run by small or family-run businesses constitute 86% of the total GDP. 

Colombia - Decaf Huila originates from one of the well-known coffee growing regions of the country: Huila. Along with its neighboring regions: Caquetá, Cauca and Nariño, Huila resides in the Colombian Massif that is home to fertile volcanic soil and Magdalena River that provides up to 70% of drinking and agricultural water of the country, which both makes the area high conducive for coffee production.

As a decaf, this coffee goes through sugar cane ethyl acetate (E.A.) processing. This is a natural decaffeination process that starts with the fermentation of molasses extracted from sugar cane. Ethanol that is achieved as a result of this process is then blended with acetic acid. 

Upon receiving the coffee, it undergoes an initial treatment involving water and steam to increase moisture content and expand the bean, making it easier to extract caffeine. This stage has a significant impact on the taste quality. At this stage, the bean goes through an E.A. wash to dissolve the caffeine. Subsequently, the beans undergo a cleansing process using water and steam to thoroughly clean the inner parts of the beans. Finally, the beans are dried until their moisture level reaches the one at their initial state.

After the process, the beans contain only 0.01 to 0.03% caffeine. This method helps to avoid excessive heat or pressure, which could significantly alter the cellular structure of a green bean.

Colombia - Decaf Huila delivers a clean, sweet and balanced decaf cup with notes of smooth and malty, graham cracker and toffee flavor. As a decaf, this coffee performs well as both an espresso and filter.
