Papayo delivered that bridge. For the signature course, it paired naturally with the savory direction he was taking, and the creamy, fruit-forward sweetness gave him exactly what the course needed. We cupped over 20 coffees from Colombia, Guatemala, Ethiopia, Kenya, and Panama to arrive at this selection.
