Brandon selected this lot for two courses in his 2026 USBC Finals routine: espresso and signature beverage. For the espresso course the draw was something specific. He was looking for a coffee that carried the chocolatey, sweet character of the coffees he grew up with, but presented through the lens he has developed as a barista working in specialty. Papayo delivered that bridge. For the signature course, it paired naturally with the savory direction he was taking, and the creamy, fruit-forward sweetness gave him exactly what the course needed. We cupped over 20 coffees from Colombia, Guatemala, Ethiopia, Kenya, and Panama to arrive at this selection. On the cupping table it showed creamy body, tootsie roll sweetness, orange acidity and notes of banana and vanilla.

This is our fourth consecutive year working with Felipe Croce and FAF Coffees, and each year the table gets more interesting. It is a coffee that announces itself early and maintains the profile across different temperatures.

This is our fourth consecutive year working with Felipe Croce and FAF Coffees, and our second time working with Sitio Siriema after a couple years. On the cupping table it showed red fruits, apple acidity, caramel sweetness, and a creamy body that carried through to a clean, sweet finish .

OUR STORY
Founded in Istanbul. Roasting in LA.
Mert Soley and Altug Baser started roasting because they wanted more from the cup — clarity, complexity, and flavors that speak for themselves. In our coffees we care deeply about the clarity and complexity of the cup and we want the flavors to express themselves in an elegant manner.
We brought that pursuit to Los Angeles in 2021. Not to build a chain, but to brew better coffee together.
