InterAmerican sources Mexico Oaxaca from different partners, and it is offered as Organic and Fairtrade Organic. After selection, beans go through the mountain water process, an indirect decaffeination technique. The process involves using a water-based saturated solution that effectively eliminates caffeine while preserving the coffee's flavor compounds, bringing out a well-balanced mix of syrupy, milk chocolate, graham crackers and black pepper.

Located in southern Mexico, Oaxaca is popular with its diverse and varied microclimates. With its mountainous terrain, varying altitudes, and proximity to the Pacific Ocean, Oaxaca harnesses multiple microclimates, each offering a distinct combination of weather and vegetation. It’s brought up in the tropical part of Oaxaca, Mexico.

Organic Coffee Growers of Oaxaca (CORO) is one of Interamerican’s partners. It’s composed of producers from several regions in Oaxaca, including Cañada, Mixtec, Papaloapan, Sierra Norte, Sierra Sur, Istmo and Costa. The cooperative has 2519 producers. 44% are women, representing six indigenous ethnic groups. CORO provides essential services to its members, including agricultural and social programs, assistance with marketing and market access, as well as certifications and milling services. All of these activities aim to improve the quality of life for indigenous communities through increasing family income.

Union de Productores Las Flores is a union based in the town, Eloxochitlán de Flores Magón. This supplier is about a 6-hour distance to the east of Mixteca, in La Cañada, Oaxaca. Each smallholder owns and cultivates roughly .5 - 3 hectares. Mundo Novo, Bourbon, Typica, and Criollo are the popular varieties grown here.

Mexico, Oaxaca from Union de Productores Las Flores is wet milled by individual producers, and then moved for parchment to the UPLF beneficio. The majority of La Cañada farmers and beneficio workers still speak the indigenous language of the region. They often consolidate their coffee with "Mixteca Alta del Pacifico" to build full containers.

The Mountain Water Process, an indirect decaffeination technique, is applied to extract a well-balanced aroma of Mexican Decaf. All our MWP decafs originate from Descamex. Here, pure water is sourced from Pico de Orizaba, known to be the highest mountain of Mexico. Commencing with a chemical analysis to establish the ideal conditions, the beans are subsequently steamed and readied for extraction. The extraction process involves using a water-based saturated solution that effectively eliminates caffeine while preserving the coffee's flavor compounds.
